Crock Pot Carne Asada
3 lbs beef stew meat
2 cans diced tomatoes with green chilies
salt and pepper to taste
3 cloves garlic, minced
1 cup chopped onion
1 diced bell pepper
3 Tbsp flour
1 tsp cumin
1 tsp oregano
1 tsp chili powder
1/4 cup water
Place stew meat, 1/4 cup water, salt and pepper in crock pot. Cook on high an let simmer for 1 1/2 hours. Drain juice from tomatoes into measuring cup. Add tomatoes, garlic, green pepper and onions to crock pot; stir and let simmer on high for 30 minutes. Add cumin, oregano and chili powder to crock pot and stir. Blend juice an enough water to equal 1 1/2 cups liquid and flour. Stir into meat/veggie mixture. Let cook on low for 3-4 hours until sauce is nice and thick. (If you like runnier gravy, 3 hours is good) Serve with rice and warm tortillas.
It was pretty good, I don't think I let it cook long enough. It will probably be great tomorrow after the flavors meld a little more. I also think I need to let it cook a little longer, because the meat was a little tough. Lots of potential just a little tweaking needed.
